Fitness Friday - Lunch

A little while ago I was talking to my mom about lunch. What to have for lunch….. (did you know that there is a book called, “No One Cares What You Had For Lunch: 100 ideas for your blog“…. I thought about that while I was writing this post, thought it was pretty funny… I’m going to blog it anyways…)

When I was a kid we would have ramen noodles, mac and cheese, spaghetti-o’s, pbj… I don’t really want those things for lunch anymore. I think that lunch is a hard meal to get right sometimes, because you don’t want to have breakfast, and it’s not quite time for dinner, so what do you do??

Lunch is usually where my healthy eating for the day turns south, unless I have a plan. In case any of you are like me and have a hard time with lunch I wanted to give a few ideas out there for a good healthy lunch that will keep you going and get you past that 3 pm binge time.

- Sandwich - Sandwiches are good. Wheat bread, turkey, mustard for flavor, throw in some tomatoes, lettuce, sprouts, avocado, and you have it all covered!!!
- Salad - I LOVE SALAD!!! I really do, but only if it has these special yummy things in it: Craisens, feta cheese, avocado. Those three things I keep on hand at all times for a salad. Other great toppings that make it so much more than a boring salad are tomatoes, tuna, sunflower seeds, black beans, grapefruit, berries, the list can go on and on.
- Baked Potato - Try a baked potato with some chili on it or some cottage cheese. Then you get your carbohydrates and protein. Don’t stop there though, warm up some frozen peas or beans for the veggies or add in a pear.
- Pita Pizza - Buy whole wheat pita’s from the store, keep a bottle of spaghetti sauce in the fridge. This makes for quick little pizzas for lunch. Throw on some healthy toppings like chicken and feta, or mushrooms.
- PB and Apples - Healthy remix of your PBJ. Whole wheat bread, spread on the peanut butter and slice up and apple to put on the peanut butter (I like to leave it open faced, just one slice of bread). I eat this for breakfast too.
- Grilled Tuna and Cheese - This was my favorite in high school and it still is. To make it a healthy grilled sandwich spray the pan with cooking spray and sprinkle down Parmesan cheese. On whole wheat put on the tuna and cheese, and grill. Eat with salsa.
- Chicken wrap - Grill some chicken, put in a tortilla with lettuce, tomato, avocado, whatever else you like!!!

There are seven ideas for seven days of the week. I think that it’s key to remember to add in a fruit or a veggie (or both) in your lunch to help keep you full with the fiber.
