
We have been devouring peaches around here for the last few weeks!! They are just soooo good! That is one thing that we really missed while living in Hawaii is that you just don't get fresh produce like you do here. The other day I made some fresh peach cobbler and it was super tasty, so I thought I would share. This is how we would make peach cobbler when I was a camp counselor up at Brighton LDS Girls Camp, so the recipe is from there, except we would use canned peaches.... not as good.
What you need...
about 4-5 peaches
brown sugar
cooking spray
1 box cake mix (white or yellow)
1 can sprite (7 UP, Sierra Mist... you get the picture)
Get a casserole dish, dutch oven, whatever you want to cook it in. Spray the bottom with cooking spray. The I like to sprinkle a little bit of brown sugar on the bottom. Then you need to skin your peaches (I didn't know how to do this, Trent taught me. Get a pan of boiling water, drop the peaches in there for about 10 seconds, fish them out, and the skins will peel right off.) Once the peaches are skinned cut them into slices and arrange a layer on the bottom of the pan. Then sprinkle your cake mix on top and pour on the pop!!! You don't want it too soupy - just moist like cake batter should be. Mix in the pop to the cake mix to get it all wet but don't mix it hard enough to disturb the peaches.... leave them be. Then put it in the oven, oh lets say 350 degrees. I don't know the timing on this, I just watch it and when the cake part starts to brown a little I take it out.
Eat with vanilla bean ice cream and ENJOY!!!! Nice summer treat!

I agree about the bad produce in Hawaii, excpet for the Asian pears. I was so excited to go back, just so I could have a huge crispy one! They're always tiny and shriveled here on the mainland.
so ... would it still be yummy with out of season hawaii peaches? of course. :)

so yummy. i love peaches, but lately everytime i buy them they are gross! i wish we could just get some amazing ones around here!
