I've been holding out on all of you. This is my favorite recipe (well, one of them). These are so easy to make, so tasty, and so good for you. Here is what you need:
Package of flour tortillas
2 cans of black beans
1 chicken breast
1 can diced green chilies
enchilada sauce
shredded cheese
garlic salt and pepper
Okay, here is what you do. Cut up the chicken into bite sized pieces. I like to cook mine in a pan with some olive oil in the bottom and some garlic salt and pepper sprinkled in there. Once the chicken is cooked you open the 2 cans of black beans, drain out all the water, and throw them in with the chicken. Then add the green chilies, don't drain out the juice. Mix that all around and heat up a bit. Then you take a pan (like a 9x13 casserole dish) and you get the tortillas, spoon a little bit of the bean mixture into it, and roll it up. Just go until you don't have any bean mixture left (should fill a pan, so 8-10 enchiladas). Once they are all in there, cover with enchilada sauce and cheese. Bake at 350 degrees until the cheese is all melted and the tortilla edges get a little crisp, and voila!!! They are so good! I probably make these every week, or at least every other week, and they are super good.
