Pumpkin Cookies...


I can't stop thinking about these cookies!!! I used to sneak over to Starbucks while on my break back in the day when I had a job, and grab a pumpkin cookie. Half dipped in chocolate... by far the best food that has ever crossed my lips... or you know, at least in the top 5.
I'm taking these beauties to a girls date today. Trent stole one this morning and looked at me with shocked eyes when I told him that they were not for him. He was pretty sad and said that tonight he wants to make more for us.
They really are amazing people! Here is a recipe that I found last night on All Recipes that is as good as the Starbucks ones...

1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (I don't do the walnuts, but if you want to go on ahead)
DIRECTIONS
Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
Add vanilla, chocolate chips and nuts.
Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
I like to melt semi-sweet chocolate chips and dip them halfway in the chocolate (see picture above.) Then I put them on wax paper in the fridge to harden. I also added a few drops of red food coloring because they were looking a little more brown than orange.
They taste marvelous!!! Perfect way to bring in autumn!!
